ROASTED BEET & CARAMELISED RED ONION LENTIL SALAD, WITH A SWEET TAHINI DRESSING

Looking for something tasty to eat this bank holiday Monday why not give this delicious roasted beetroot and caramelised red onion lentil salad with a yummy sweet tahini dressing a go! Roasting beetroot is a game changer I would never have of thought to do it, but it’s absolutely delicious as it goes crisp and caramelises beautifully in the oven, plus it goes really well with the sweetness of the roasted red onion too. This salad is vegetarian, however if you want to make it vegan just change out the honey and add in a vegan sweetener substitute such as brown rice syrup, agave nectar, barley malt syrup and pure maple syrup. The lentils in the salad are a great source of protein and they add a bit more balance to the salad and will keep you fuller for longer. 

This is a perfect salad to take to work, as you can roast the vegetables ahead and store them in an airtight container, they will keep in the fridge for a few days. It is easy to make up the salads the night before giving you a nutritious healthy lunch that is satisfying too. I tend to try and make salad dressings in batches so I can store it in the fridge this mean I always have a homemade salad dressing to hand. This dressing is perfect for this and it can be drizzled over any salad, it is packed full of flavour and will liven up any salad.

If you want to have this salad more as a quick and easy dinner, you can simply add grilled chicken or salmon they would be lovely with it. Also you could try sprinkling over some toasted nuts and crumbled feta with these few additions it will definitely give it some bulk and make it a more substantial meal.
